Stik Gurita Kaya Protein Dan Omega-3: Inovasi Camilan Sehat Berbasis Potensi Laut Lokal Di Kabupaten Kaur
Abstract
Kaur Regency is one of the coastal areas in Bengkulu Province with abundant marine resources, particularly octopus (Octopus sp.). Most octopus catches are still marketed as fresh products, resulting in relatively low added economic value for fishermen and small-scale businesses. Therefore, product innovation is needed to increase the competitiveness of marine products while creating new business opportunities based on local resources. This community engagement activity aimed to develop High-Protein and Omega-3 Octopus Sticks as a healthy snack with high nutritional value and greater economic potential. The implementation method consisted of regional potential identification, market analysis, product formulation, production process, packaging development, and marketing through both direct and digital channels. The production process included cleaning fresh octopus, boiling, grinding, mixing with other ingredients, shaping, frying, draining, cooling, and packaging using standing pouches. Product quality and business feasibility were then evaluated through production cost and revenue analysis. The results demonstrated that octopus sticks were successfully developed into a nutritious snack characterized by a crispy texture, savory taste, golden-yellow color, and high protein and omega-3 content. The product was packaged attractively to improve market competitiveness. Daily production reached approximately 35 packages with a selling price of IDR 15,000 per package, generating an average daily turnover of IDR 525,000. This innovation increased the added value of local octopus commodities, enhanced students' entrepreneurial skills, and created opportunities for sustainable marine-based businesses in Kaur Regency.
