Aneka Kripik (Rasa Ikan) Inovasi Camilan Sehat Dan Bergizi Tinggi Sebagai Strategi Ketahanan Gizi Dan Peningkatan Ekonomi Ibu Rumah Tangga Di Kelurahan Pasar Baru Kecamatan Kota Manna Kabupaten Bengkulu Selatan
Abstract
Community Service aims to develop a variety of fish-flavored chips: an innovative, healthy, and highly nutritious snack as a strategy for nutritional security and economic empowerment of homemakers in Pasar Baru Village, Kota Manna Subdistrict, South Bengkulu Regency. A participatory and community-empowerment approach was employed by actively involving homemakers and the Arco Azka MSME as partners in all stages of the project. Research results show that the fish chip production process consists of nine stages: fish selection and cleaning, pressure cooking, fish grinding, dough mixing, kneading, rolling/shaping, frying, draining, and packaging, with a total time of approximately 3–4 hours. The main innovation developed is a stick-shaped product that offers ease of consumption, a more appealing appearance, and the potential to reach a broader market segment. Financial analysis shows a production cost of Rp 968,000 per batch, yielding 40–50 kg of chips, with an average gross profit of Rp 1,832,000 to 2,532,000 per batch. This business also has a positive socioeconomic impact by employing 4–15 homemakers and contributing to the community’s nutritional needs. It is recommended that the business owner standardize production processes, improve packaging, and expand marketing strategies through digital platforms.
